Coming home…

I am a homebird.  Cancerians are notoriously so. Adventurers, creative and wild – yep I’m all those things – but mostly I love being home.

Travel is in my blood, and mad adventures, but there is nothing more wonderful than returning home, to my own house, to my things, my bed, my loves.  I think travelling the world for many, many years, having nothing but a bag of belongings has made me want to ‘nest’ more than ever.

So what do I love about coming home?  After a busy day, working, dealing with kids clubs, food shops, what is it I love most when I open the door?  Oh everything and all.  Hugs and kisses from my boys, flicking on the kettle for a cup of tea, sinking into the sofa for a cuddle.

On some days, when I have been really proactive, I love to open the door to the smell of a casserole simmering in my slow cooker.  Knowing that supper is but minutes away and hungry children can be set at ease – those days are the best.  Supermum, kind of days.

My go to recipe is this:

Moroccan Lentil Casserole
Ingredients
2 cups chopped onions
2 cups chopped carrots
4 cloves garlic, minced
2 teaspoons extra-virgin olive oil
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon ground turmeric
1/4 teaspoon ground cinnamon
1/4 teaspoon ground pepper
6 cups vegetable stock
2 cups water
1 chopped cauliflower
1 3/4 cups lentils
1 can tinned tomatoes
2 tablespoons tomato paste
4 cups chopped fresh spinach
1/2 cup chopped fresh coriander
2 tablespoons lemon juice

Method:

  1. Combine onions, carrots, garlic, oil, and the spices into the slow cooker. Add stock, water, cauliflower, lentils, tomatoes and tomato paste and stir until well combined.
  2. Cover and cook until the lentils are tender, 4 to 5 hours on High or 8 to 10 hours on Low.
  3. During the last 30 minutes of cooking, stir in spinach. Just before serving, stir in the chopped coriander and lemon juice.

Serve with floury pita or couscous and a grating of cheese (which my two boys love).

  • Home for me (sigh) I am a mature student and home educate my boys. So.our home is our everything my eldest has chronic kidney disease and hyper tension so we home ed as hecwas getting too ill from.bugs at school. So.its our home, our classroom, our sickroom our love and fun rooms our everything and our mess lol
